Crisp aromatic juniper leads to pine and lemon zest notes opening to herbaceous fennel, orris and coriander leading to soft, spicy complexity from nutmeg, liquorice, cubeb peppers and green cardamom. A whisper of the Irish Sea comes from a delicate touch of sugar kelp, which brings a mineral rich umami note with a lingering clean finish.
