The Making of Autumn - A journey from Land to Bottle

There is something special about watching the seasons unfold on the Isle of Man. From the first gorse flowering along the cliff paths in spring to the rich colours filling the glens in autumn, the landscape is constantly changing. Yet alongside these seasonal rhythms are traditions, stories and customs that have remained woven into Island life for centuries.

It is this relationship between landscape and heritage that inspired our Four Seasons Gins - Spring, Summer Autumn and Winter. Each gin is created to capture a particular moment in the year, drawing on the flavours of the landscape and the traditions that have shaped life here.

Our Autumn Gin takes its inspiration from Yn Mheillea, the ancient Manx celebration of harvest time. For generations, the harvest marked an important moment in the Manx calendar. Once the crops had been gathered, communities would come together to feast, dance and celebrate the end of the harvest. It is this spirit of harvest that we wanted to capture in our Autumn Gin.

Gathered from the Land

The Isle of Man is a remarkable place to make gin. As the world’s only entire nation recognised as a UNESCO Biosphere, the Island is home to a rich variety of landscapes and habitats. Coast, glens, hills, farmland and hedgerows sit within a relatively small area, creating an extraordinary natural larder that changes with the seasons.

Rather than trying to make the same flavours available throughout the year, we embrace what each season naturally provides and only hand-pick ingredients when they are ready.

In autumn, that means the fruits and flowers of the harvest: Isle of Man grown apples and crab apples, rowanberries, rosehips, heather and wild plums.

Our team forages across the Island, gathering ingredients from hillsides, trees and hedgerows as they come into season. Everything is picked carefully and sustainably, taking only what we need and leaving plenty for the wildlife. It is a slower, more hands-on way of sourcing ingredients, but that connection to the land is fundamental to what we do.

From Harvest to Still 

Once gathered, we take our ingredients back to the distillery where they are carefully prepared for the still. Our Manx apples, which are the key ingredient in our Autumn gin, are hand-pressed to extract their naturally sweet juice. 

We distil in traditional flame-fired copper pot stills, affectionately known as The Twins. One of the oldest and simplest forms of distillation, this hands-on method gives our distillers a close connection to the spirit throughout the process.

Working in small batches, we can respond to the natural character of each ingredient, carefully balancing the botanicals to draw out their individual flavours and aromas without allowing any one to overpower another.

As the spirit moves through The Twins, we carefully select the heart of each distillation: the part of the spirit that gives us the balance, aroma and flavour we are looking for. 

The Final Touch 

Once distilled, we bring the spirit to bottling strength using pure Manx water.

Water may be one of gin’s simplest ingredients, but its quality plays an important part in the finished spirit. The naturally soft, clean Manx water helps shape its texture and mouthfeel while allowing the delicate flavours captured during distillation to shine through.

The finished gin is deliciously rich, with sweet notes of apple and plum, tempered by the earthiness of rowanberry and rosehips, and finishes with a beautifully soft mouthfeel.

Once the gin is complete we carefully fill, label and seal the bottles by hand ready for the shelves. 

It is a fittingly hands-on ending for a gin whose story began in much the same way, with our team heading out across the Island to gather what the Manx landscape has provided.

From the first apple picked and pressed to the final bottle labelled by hand, our Autumn Gin is a labour of love and a true celebration of the Manx harvest.
